Just got my LG&E bill (late Christmas mail delivery). They slipped in a notice to customers that they're seeking an 11.6% increase in electricity and an 8.3% increase in gas. Great news right before Christmas. Evil bastards.
I like gizzards, liver not so much. I do like calf liver and prefer it raw. Don't care much for kidneys either. My favorite food growing up was the gray squirrel. Mammaw made squirrel stews, pies, casseroles, southern fried, glazed in an oven. Anyway it could be prepared it was. It could be served for any meal. My Papaw showed me hollers where family planted scattered walnut and chestnut trees and let the squirrels produce the groves in top secret locations. They had chickens for eggs, ate hunted wildlife, wild caught fish and sold the tobacco for cash. I'm a truly omnivorous creature and every bite a blessing.
It's sad that they sent your cards to Charleston when they were only going across the street.If I had used next day shipping, for 88 Christmas Cards, I would have had to borrow money from Bert, or Sawnee.
Speaking of Opossum, this is some truly good eating.Some of you guys would eat stuff that a oppossum wouldn't.

I read that it was considered sweet by many native American cultures and a spiritual acknowledgement to life so I gave it a shot . . . to my surprise I liked it. I was alone. I had to know. Now the family being civilized some 500 years, it's not regular cuisine.Raw calf liver? Gag me. Rooster, they should have cast you in Silence of the Lambs.

Dad had property and a cabin on the Burnside end of the lake. Lot of good memories. Nice retreat during college days for a weekend if I wanted.Pretty country up there. I’m at the tail waters on the other side, about one and one half hours from there. Cumberland is a massive lake.
I ate possum when I was a boy. We had friends from church who lived way out in the woods and their dad was the type to literally live off of the land and wildlife. After Sunday morning church I would often go spend the day with him and would return for Sunday night service. Several times his mother fixed possum and sweet potatoes.Speaking of Opossum, this is some truly good eating.

When I became an adult I had it a few times when it was served up on wild game retreats a bunch of us men took together near Cedar Key. But that all ended from an incident I had in San Angelo, Texas on a very large ranch outside of town.
There was a large pipeline and pumping station that ran across the ranch and one of the gas turbines blades failed shutting it down. As I was inspecting the turbine and talking to the engineer about repairs I noticed a dead and rotten cow about 50 yards away. A possum was crawling out of the rear end of that thing. The rancher told me the possums crawl into the intestines and eat grain or corn that may be in the cows stomach or intestines. That was one of the nastiest things I have ever witnessed and it brought a halt to my possum eatin'. Never again. There are some things that even I will shy away from when it comes to eating and possum up dead cows rear ends are at the top of the list.

Didn't Turtleman die?Had a friend that used to eat soft shell turtles. He and I were trot lining for catfish one week and were catching lots of hard shell turtles, which he didn’t eat. I would just take my 22 pistol and shoot them and they would sink to the bottom of the creek. Well, it was very hot, and in a few days they floated back to the top. Stunk like crazy. He ate a mess of turtle one night for supper, and woke up in the middle of the night thinking about that stink. Said he ran out the back door and threw up for an hour. He never ate turtle again.

The original Army movie of when they filmed the plane/crew is on I believe Netflix.
They put the Belle on display at the Air Force Museum outside Dayton, OH about two years ago. Seems I read where it took a number of years to restore it. I've seen it there a couple of times.

Except for the liver, you just described me. Grew up eating whatever was easiest to catch and available. That’s why I prefer those things now as I’m getting older. Fried squirrel, biscuits and gravy is still one of my favorite things. Nobody made it better than my grandma.

I never liked rabbit, but my wife loves rabbit and does not like squirrel.
I have never eaten raw liver but hell I would try it. Raw seafood is good. I like my steaks near raw, even though late in life I have been grilling them a couple minutes longer.
