I just learned that last year. Blew my mind that they improved upon cauliflower nearly 100 years ago, yet it's somehow still here.
Seriously, I had to learn to get down with cauliflower crust pizza due to gluten. Some places know how to do it very, very well. Donatos being one. I actually prefer it in some cases.
Have you had Caulifloccoli? Caulifloccoli is similar to Broccolini but looks like cauliflower in a cheesey avocado sauce. Yum.
