Well, it's a process. I mean we're so young. Can't expect much when the pork is that young. Youngest pork in the supermarket. Butcher told me he's never seen pork that young before. Gonna tweak some things for the next time. But it's just a process when they're this young.

You can't expect every cut of meat to handle pink AND grey salt, especially a young 12# tenderloin.
When the pork is young it reverts. That's what you do when you are young. It's not a robot.
