D-League

10 day soak? What's the advantage to that, and your recipe for the brine. I have been wanting to smoke a brisket for a while now. Gotta hold off a bit as I just had back surgery 2 weeks ago. I've made pork belly burnt ends and did not care much for it. It was all fat. Maybe I didn't cook em long enough. They looked amazing but it didn't seem to be worth time. Looks like the D is doing great and chugging along. Carry on
Sorry to belatedly hear of your surgery......hope you have a full and speedy recovery sir......next time send those nasty, fatty burnt ends to awf........
 
Some may have heard about this... (I forgot about it.)


I was driving on HWY 495 an hour and a half or so ago and saw tons of vehicles. (Passed some and some passed me but there were bunches) Keep in mind the pictures below were a good ten miles outside of DC.... (I snapped these while driving and took a bunch but was really watching the road. Horns were honking wildly and people were waving frantically... I can only hope...

Don't tread on us flag...(On the side of that van)

There were tons more vehicles (Plenty of 18 wheelers making noise as well.) and people but I never thought to snap pictures at the time... Maybe, just maybe...

I don't know, I've complained about the 10 day soak since the first time I made this. I have to assume that Alton Brown did a 1 day soak through probably 12 days to see what was best. The potassium Nitrate needs enough time to permeate the entire hunk of meat to preserve the nice pink color we all know and love. Each time I've made this it has been the best corned beef I've ever eaten. I can't change now.

It'll be good Bert. I follow the recipe exactly each time. That includes, among other things, 8 allspice berries and 12 juniper berries, whole. Not 10 or 14. Makes me laugh but I do it just like he says each time.

I got a new cast iron dutch oven in the mail today. Needed one that was enameled on the inside so I could use it for reactive ingredients. I'm going to use it to bake our rye bread in for the sandwiches.

Awesome weekend for Wildcats sports. Women's basketball victory totally unexpected, but most welcome. Men's BB swept Gators. Bat Cats won 2 out of 3 against TCU. Love it.

Good morning, D-League!

Today is also national "don't spit your oatmeal bake out of your nose" day! Careful what you read and when. It's better than blowing RC Cola out of your nose, but not by much (happened in the 80s when a friend of mine made me laugh at dinner). Thay burned for at least half an hour....

Pretty incredible weekend for for Cats. Hope that continues. Cal lost another big name recruit... woe is us, Skyy is falling... Seems like this one may have been napalm rather than a blessing, so I'm glad he's moving on. All good news for the most part.

Warm and windy here with gusts occasionally up to 90° on the mustachiometer. Combovers and mustaches alike BEWARE! Mine is sideways like Yosemite Sam after an a miss-aimed blast. Rain and 64° out there on our way to 40 something according to 1/3 of the weather peeps!

Good Morning

What a nice and deserved win by our Kentucky Women's Basketball team. Second SEC Championship in history and first since 1982. Been a long time but this team never quit even through adversity and doubt.

It is 66° currently with sunshine, the temperature will climb to 83° with a 24% chance of late afternoon showers.

The local news is beginning to focus on issues in Cuba and Venezuela, both friends to Russia. Putin visited recently and discussion may have been over putting nuclear weapons in Cuba. That would be a ball game changer. I sure wish we had a strong president if we are going down that road. Times are changing but the old threat is still hanging around.

Below is a nice shot of Royal Caribbean's Brilliance of the Seas passing under the Sunshine Skyway Bridge in Tampa Bay last night!

Raining and 65.1°F on our way to 65°. It has been really windy the last two days as this front comes through. We hear occasional thunder. At the moment we are getting a frog strangler.

I enjoyed watching the girls win the SEC Tourney. It has been a long time. Maybe the boys can do it this week.

Nice weekend here, with weather getting up to the 60s and clear blue skies.

The Cats cooperated by winning and Duke and Indiana cooperated by losing.

Congrats to the Lady Cats. I've never watched a woman's basketball game for more than a couple minutes, but I'm always glad to see Kentucky succeed.

Back to work. I hope it is a good day for all.

I MADE IT!!!

I wasn't there long but took a couple pics of the inside of the building and where I was parked. Take note, the swamp doesn't get up early. This was around 0630. I was the first one in. No traffic... very few people. My appointment was at 0800. Must have been bargaining unit employees as their door opened at 0800. I was gone in about 11 minutes after that walking the half mile or so back to my car.

The lights came on as I entered. Tomb empty...

This is a cross hallway between corridors...(In the basement)

I received my water bill this morning. opened it up and almost fell over. It usually runs between $8 - $12 per month. This month was $96.00. My first thought was I have a leak.

So I go through the house trying to hear water running or any sign of moisture. Nothing. I go outside and look all around the ground for signs of water. Nothing. Then I look up at the roof and I think I found the problem. I have a solar pool heater on the South side of the house, way in the back and water was running from the tubing into the gutter and into the ground. The pool has been getting low faster than normal but I thought that was because we have not had rain in a month or so and the lake is down also. Nothing abnormal for this time of year because we are the dry season. So it took a water bill to wake me up.

The solar pool heater boy will be here Wednesday afternoon to handle it. I will have a $50.00 service call and if it is the panels they are covered by a 10 year warranty and if it is the tubing that will be minimal. So I should get by for less than $100 which is almost as much as the water bill.

Sorry to hear that Sir. One thing about this joint that has been good is our water and sewer bill. It is about 47 dollars per quarter and that recently increased from 42 dollars. Just had the county tax assesor tell us they are trying to increase property taxes about 19% (Normal annual is 1 to 1.5%) I will fight this one very hard.

Good morning from ATX. Currently 43°F and cloudy. Windy. Chance for rain first half of day. Today's high expected around 49°F.

Filled up yesterday for $3.79/gal. No driving plans until at least Wednesday or Thursday. Appears gasoline heading north of $5/gal. Hopefully not more. Our world changed again in a hurry.
