D-League

I've got a 13-pound whole brisket that I'll be throwing on the Egg around 2 AM. Hopefully it'll be ready to pull by 8 PM but it could be as late as midnight. Cook it until it's done is the BBQ'er motto.

I smoke mine at 250 until it reaches an internal temp of 165 then I wrap it in foil, add about a half cup of beef broth then let it go till 200..I put it on about midnight and it was ready about 2 pm next day...let it rest for about an hour. I recently cut the point off ( leaving just the flat) and ground the point into burger blended with some ground bacon. Made awesome burgers

That sounds like you know how to do it.
 
First time I've looked at this thread. Totally different than what I thought it was by the title....where did that come from? Anyway, looks like just a discussion board without the sniping and so forth. I'll check some more.

I've never cooked a whole shoulder, just the butt or the picnic. Might try it one day. I've had my smoker since 1999 and have cooked brisket every way possible. I've come to learn that keeping it simple is the best method. No injections or complicated rubs. The hardest part is the prep work. Certainly worth the effort though.
My pork loin yesterday was good, but as you said the complicated stuff is not worth the effort. I marinated the loin for three days in the frige and it was good but hand rubbing it with olive oil, salt and pepper would have been darned near as good and saved me a couple hours of work.

  • My old fishing buddy and I used to have this spot that was about 20-30 minutes from our neighborhood. It was 2-3 acres fed by Chicken Creek, not over 5-6 foot deep except for the levee, full of Crappie and LMB and Bluegills. Caught my first lunker there and a 3 pound Crappie one time. We had some great times there. That has only been about 40 years ago.

That's almost exactly how I do it. Instead of foil I wrap it in butcher paper. I let it rest in a cooler for about 3 hours. I also make burnt ends out of the point. Good stuff.
 
Stay up all night? Or...'set it and forget it'?
A little of both. The Big Green Egg holds the temp extremely well but there can be some fluctuations. Plus I wrap the meat when it hits 165 degrees. Just finished doing that. Fortunately I have a dual probe thermometer with a wireless monitor so I can keep watch on the smoker and meat temps while napping on the couch.

just saw a post of yours at about 3am on the Political thread so I figured you were dozing at the most.
I've never done an all night smoke. Told the Mrs the other day that I might try it some day (for a lunch time meal), but I'm half afraid that a varmit in the middle of the night would smell it and knock it over..And don't know if I want to stay up all night. I've got a gas smoker so once the temp is right I could go to bed, but living kind of in the country with the corn fields I've seen about every type animal on our property.
 
Good Sunday Morning

Drinking a nice strong black cup of coffee waiting for the sun to come up. The temperature is 71° and should climb to 87° by this afternoon. We will have a very clear sky with sunshine and a pleasant humidity of 97%. This means an afternoon shower has a 50/50 chance of visiting us.

I am getting ready for church and joining us today will be a very Special Guest Coach Bobby Bowden who retired from Florida State where he coached the Seminoles. Coach Bowden is a strong Christian man and is a friend of the church. He also had some petty good teams up there in Tallahassee.

Reading about that brisket makes me hungry. UK82 you have a great set up and that piece of meat will turn out excellent. Believe you me. That is good eating.

Y'all take care and enjoy God's creation. Get outside, take off your mask and breathe some fresh air. It will do you good.

It would have to be a pretty big critter to knock over my Egg. Our dog can't wait. He's been hanging around the smoker from the start.

Brisket is tricky because it's difficult to predict when it'll be done. Usually 1 hour per pound plus a 1-4 hour rest is a good estimate. But I've had some that were closer to 1 1/2 hour per pound. That's a 6 1/2 hour difference for a 13-pounder. The "stall" is unpredictable. I'm guessing it'll be done sometime between 6 PM - midnight.
 
Good morning from ATX. Currently 73°F and partly cloudy. Expecting today's high at 91°F. Finally some reasonable daily temps. Cold front coming in Tuesday night. Our first hint of Autumn should arrive Wednesday. Can hardly wait.

Must take our pup to Petsmart for bathing and grooming appointment at 10 am. Plan on knocking out a few chores later on today. Zaxby's planned for lunch.

I talked to him one night in the parking lot of the Fulton County Jail. He knew a lot of guys that were dope dealers. He was driving a Bentley.
My brother's grandsons went to Bellbrook H.S. east of Dayton. One of them played varsity b'ball. Bro told me that Dwight would show up at just about every Bellbrook game and sat with the same family. Obviously knew one of the kids on the team and the parents. Said he would talk with everybody (brother included).

NOOOOO! So sad. I attended the crazy comeback game against Kansas in 1978, my freshman year. Down by 6 with 31 seconds to go and Anderson went on a tear to help win the game. Many people were headed for the exit and had to run back in because the roar of the crowd was deafening.
 
It is starting to ramp up in the fishing realm now. Friday hooked 6 landed 3 and today I hooked 5 and landed 4. The first catch of the day is pictured below. 3 hours of fishing and now Wendy has her fish fry. Kept 3 of the 4 today.

Reminds me of the backdrop of some videos on YouTube of 'Cowboy' Kent Rollins, if you know who he is. Does cooking videos most of which are of the old chuck wagon days. He's in Oklahoma...SW I believe.

These were caught at Rattler pond on FT. Sill. The other day at Cornplanter pond. My 2 go to's for now. I will be doing a recon for more as the weather gets cooler. There are 2 others I go to but Rattler and Cornplanter are my favorites.

Oh how I hate to see this. Of all the basketball players UK has signed in my lifetime, Dwight is at the top of the list. I was so excited after his break out against Notre Dame, the "star is born" game I just knew he would be the best of all time at UK. Then drugs, then is is gone.

Ah yes Kansas. I may have told this story before but I have to tell it again. It is a game I can never forget because my son will never let me forget it. A little background to set it up

My son was 7 years old and we lived in Clearwater. He was a good student and I told him if he made 100% on a test I would take him to a UK game at Rupp Arena. He busted his butt made the 100% and was really excited when I told we were going to the Kansa game that weekend. . I had a nice custom van all decked out in UK blue and white to drive up in so when I got off work about 3:00, I drove straight to his school picked him up and we headed up I-75 to Lexington, KY. It was a Friday afternoon. About midnight we crossed into KY and I grabbed a couple hours sleep at the rest stop. It was so cold ice formed on the windows inside our van. We went on into Lexington and I spent the afternoon taking him all over town showing him the sights.

It was a night game and a very exciting game then Kansas pulled ahead with a minute or so to go so I told him we had to leave. It was nasty weather and we were going to drive back all night to Florida and I wanted to beat the crowd out of Rupp. I did not want to get stuck in ice for two hours on Richmond Road. He really balked and said, "daddy we are going to win this game. We can't leave now we have to cheer them to victory" I said sorry that is not going to happen and we have 900 miles of bad road ahead of us. Let's go son, let's hit the road. Getting over Jellico Mountain was on my mind. So he held my hand and we walked up the steps and ran to the parking lot to the van. I turned on the game. I think Macy was shooting free throws, I really don't remember but we did get the game into overtime. Meanwhile my son is looking at me like "I told you so". I disappointed my boy for his first game at Rupp and I never lived it down. We laugh about it now everytime we think about Kansas.

So many great memories from Rupp Arena and just think some people want to rip it apart. This is an example as to why us old boys fight so hard for Rupp's good name.

Good story. I had several friends do the same thing. It was a remarkable comeback because there wasn't a 3-point shot back then. Unlike the miracle in Baton Rouge they had to make 'em the old fashioned way.

Yes there were lots of fans getting on their feet the last few minutes. I had to be back at work Monday morning so I needed to get on the road. The reason I left with a minute to go was because of the weather. It was cold, ice was forming on highways and I had to cross that dreaded Jellico Mountain in Tennessee.

But I broke my 7 year old's heart and that hurt more than anything. It was a great win because Kansas was a very good team that year.
 
My friends in Cumming, GA sent me this picture. They live on Lake Lanier. They were part of a boat parade for a certain presidential candidate. I see Lake Travis in Austin TX also had one. We have them every weekend around here.

My cousin makes flags and she said her little factory can't keep up with the orders. I bet a lot of them are going on these boats.
