This one is good. Just rub your ribs the night before and wrap them in aluminum foil. I smoke mine at 250 degrees for about 2 1/2 hours, then I pull them, wrap them in foil and finish cooking them at 250, in the oven until tender. Being wrapped, the fat renders from them and keeps the ribs moist. You will not need sauce.
