D-League

This is in honor of Y(Free Y)
Fixing Flat Iron Steak today, not grilled

Putting it in the oven, then mixing up a can of mushroom, putting onions on top of the FIS, then pouring the mushroom soup over the steak and onions, cooking about 5 hours low and slow. I am cooking 2 so one will be for supper, then one will be for hot beef sammmmmichs and the rest will be for beef pot pie. I hope Y is lurking somewhere!

Good to see you Mrs. Bkocats, this is delicious, just a different spin on FIS.
 
Sorry I didn't get this posted but we were gone for a while and when I returned, we had a house full of grand children who talked me into a game of Uno. Anyway, here it is. It is the recipe from my great uncle's restaurant, that closed in the early 60's. Really good Carolina style Barbecue.

Cook a 4-5 lb pork roast until tender. Salt while cooking.
Let cool and then pull apart and set aside, discarding any fat.
Then prepare sauce, using:
1 cup of finely chopped onions
1 cup of finely chopped celery
3 cups of Ketchup
6 tbs of brown sugar
6 tbs of vinegar
2 cups of water
1 1/2 tsp of allspice
Salt and pepper to taste
Cook sauce at low to medium heat, stirring frequently to keep from sticking, and until celery and onions are tender
Stir in shredded pork a little at a time, and then simmer for about and hour. If needed, add water.

Enjoy.
I am going to try this one for sure. I an always looking for a BBQ recipe and this one looks like an excellent one. Thanks Ben

Good morning D League. Off and running on another week. At least this one will only be four work days for me, then my wife and I are taking a brief trip up to Vermont to see some of the fall colors in the mountains up there. Lots to get done before then.

It is really good, and keeps well in a crock pot, at a gathering, or to store in the refrigerator and then reheat. Also, small portions microwave well. Hope you enjoy it. Hopefully, Ymmot will be back soon. Maybe tomorrow I will post a good pork rub.
 
Good morning D! Wow how the weather has changed! We are at 3" of rain and still raining, parts of the Berg has had over 4", we needed the rain but not a flood, what we needed was a soaker. Right now it's raining, wind blowing and the wind chill is about -10, going to be a long winter for cord!

For the Trek groupies (me included) I have stated that I do not like reading, but Mrs. M has been trying to get me to starting reading a little bit, she stated that it will take you places as you read. Well I found a Star Trek that I think my B-I-L gave to me years ago and read it, now I am starting to read it again because, I didn't read it deep enough the first time. If you haven't read it, Federation it's really a good one. It takes you back all the way to the beginning of warp drive (Zephram), Kirk and Picard. Anyway it did take me places and I could feel the wind blowing over my bald head and oh never mind!!

Headed Krogering in a few and try to find another 12" Dewalt clamp for my S-I-L, my daughter said she doesn't

know what to get him, so I told her I would pick up another one at RK, ever guy or gal needs two good clamps to work with!

Out of here D fir a while. Prayers for the D! Ya'll have a good one.

Our rain, in Ashland, has been really good. I was afraid that we might get too much, too fast, and most of it just run off. Instead, we got a little rain that softened the ground just a bit, a break of a few hours, and then we have gotten a nice steady rain that is soaking in well. It has been great.

As always I'm fired up about basketball and I can name the whole team, their positions and class but still learning numbers. But it's still midseason, bye week is over and lots of football to watch. I enjoy UK football and prefer winning but losing has never stopped me before.

Good Tuesday morning D League

We have a nice day this morning as we sit here waiting for the sun to come up. It is 67° and we expect a high of. 85°. We may get some more rain off of the Gulf. Yesterday it poured down like a summer storm in the afternoon.

I have some whole hog sausage, bacon and Andouille smoked sausage cooking outside by the pool. Breakfast is my favorite meal. We have out of state guests who came down here to cool off. :sunglasses::sunglasses: It has been warm this year in Forsyth County, GA. Listening to the radio our governor has announced Florida is raising teacher pay across the board and our state will have the second highest starting pay for new teachers. He said our state has millions of dollars in surplus so the money is there. $603,000,000 will go into raising teachers pay across the board. They are raising starting pay to close to $50,000 It had been $38,000. That is quite a bump for us because we have always been one of the lowest paying states. I say the governor has sewed up the teachers vote and the economy is booming down here. Low taxes work.

I trust all have a nice day . .
 
Morning D, a cool 44 this morning in the Berg!

Just watched a documentary about the Mullins family apple industry, three generations of growers from Eastern Ky.

Beautiful day here just got to figure out what I want to do.

Mrs. M is sad because our Hummingbirds are apparently moving on south, we changed the food for them just to give the passerby's will have an extra kick on their way south.

Flat Iron Steak was excellent Mrs. M said, along with mashed taters, salad and a roll. I just can't help it, but the gravy out of this is going to clog every artery I've got!!!! Gravy on the taters, rolls and the meat then, sop it up with another roll. Got a new song, When the gravy's called up yonder I'll be there!!!!!

Low taxes work, especially when you have a gazillion theme parks and snowbirds paying sales tax. Tennessee has Memphis, Nashville, and the Smokies. I wish Ky had some attractions that would offset state income tax. Maybe we could open up Minardi Hall as a tourist attraction.

Hello everyone, Low taxes are good, but by about January I think I would rather pay more taxes than put up with the snowbirds....LOL
 
As promised, in absence of our beloved Ymmot, I am posting a nice dry rub for pork. I use this one for ribs, and loins.

1/4 cup of Paprika
1/8 cup of Ground Black Pepper
1-2 TBS of Garlic Powder
1-2 TBS of Onion Powder
1 TBS of Cayenne Pepper
1/4 cup of Coarse Salt
1/4 cup of Brown Sugar

I really like this rub, but if you have a spouse that doesn't like ribs or chops with a little bite to them, I recommend that you cut the cayenne from a tbs to a tsp.

Enjoy

Oh this looks real good. With football Saturday this might be exactly what I need to try for game day. I like a little bite to my ribs .
 
health issues for the last few weeks...major appreciation for well wishes..first up..since august the 26th I dropped 25 pounds...and I have been fat full everyday by eating less carbs and much more healthy..I'm still drinking my beer and losing...Now for the cancer scare...My urologist says a steady upward increase in PSA test worries him more than a sudden upturn..( my results)..says my increase is more likely a infection ( taking major dosing of Bactrim ) for the next three weeks..He seemed very positive on his prognosis which prompted me and my bride to spend the awesome 4 days at Margaritaville in Gatlinburg..total stress chill out.. Thank you D league..
