As with anything, country hams are not all created equal. Some suck, but that's normally because whomever tried to cure it, sucked.
The best I ever had was from a guy now long deceased. His were always on the small side, usually around 20 lbs, give or take a pound either way. And sugar cured. OMG, the dude was a DRUNK, but by damn he knew how to cure a ham.

I like good country ham on a biscuit plain. If I want to fancy it up, a little mustard is a good flavor combo. Never considered mayo, which I love.
 
That shit my dad called “city ham” is the picture of entitlement.

Thinks it’s better than country ham because it lacks salt.
 
My Mom grew up in Portsmouth VA, and one of my fondest memories is when we'd go visit my grandparents for the Christmas holidays. G-PAW always had a Smithfield ham for Christmas dinner.

On a serious note, (yes, I know, not the norm for me) and on the same lines as healthy eating, do we eat healthier when the food is rather tasteless to try and lengthen our lives or, do you just live eating basically what you want and enjoy life more.

Me, I try to eat healthy but when I think about it, I usually eat what is more satisfying to me. Wife was trying to get me to eat cottage cheese, yogurt, spinach leaves as a salad and so on. NOPE. When doing a salad, I just do the regular salad mix with iceberg lettuce and other better tasting veggies.
 
As I've gotten older, I eat healthier, but it's not necessarily to live longer, it's primarily because of how nutritionally empty foods make me FEEL, an hour or so after I eat. If I ate fast food for lunch, for example, I'd feel crappy by 1:00 That said, sometimes you've got to hit Taco Tico.

With respect to salads; if I'm eating a salad it is GOING to have Bleu Cheese dressing on it. PERIOD. LOL Now, I'm not pouring 3 or 4 ramekins on it, but still; bleu cheese. LOL

I tried "smoking" a country ham one time, and it was awful. Somebody suggested it/said how good it would be. Pretty much ruined it.
 
Hardly ever put dressing on my salad. Generally, salt, pepper, and maybe one of those dry seasoning mixes. On occasion, but not very often, I will add either a light Italian or a vinaigrette.
