Probably not salty enough
I have 5 hams curing at the farm right now. One is 2 years old, two are a year old, and two just started this past winter. Going to cut into the 2yo ham for Easter.
As long as it's on a biscuit with mayo, pepper, and a thick slice of mater, it's healthy for you.
WTF is country ham. Is that like honey baked ham?

Mayo on the biscuit. The mayo works as a sealer for the mater to keep the biscuit from getting soggy. Ham goes on the mater.
As with anything, country hams are not all created equal. Some suck, but that's normally because whomever tried to cure it, sucked.
The best I ever had was from a guy now long deceased. His were always on the small side, usually around 20 lbs, give or take a pound either way. And sugar cured. OMG, the dude was a DRUNK, but by damn he knew how to cure a ham.
