My question is can you bet on a dog to win out right?.... or can you only bet on the spread one way or the other?
In other words, could I bet on the Cats to win the game at Knoxville this saturday?.... or can I only bet on them to beat the spread? And if so, is the payout higher?

No you can beat the favorite to win or the underdog to win on the money line. Depends. You can take either team on the ML, whoever you take, they must win. Example, ML on Tenn. is -1200. That means if you took UT and the ML, you would win $83 if you lose, you lose $1200 on a $100 bet.
